My zucchini chocolate cake is delicious and healthy at the same time: no butter, no milk, only raw sugar. Moreover you can’t imagine the amazing taste of the avo mousse on top! It’s also a perfect snack for kids. Don’t be afraid by the fact of the word “zucchini” and “chocolate” appear in one sentence, let yourself go beyond ordinary…
1 very ripe banana
½ cup of raw brown sugar
1 tablespoon of honey
½ cup of raw cacao powder
2 medium zucchini
1 cup of flour
½ cup of sunflower oil
½ dark chocolate bar (optional)
The ingredients are listed following the order of the preparation.
In a big bowl start mashing the ripe banana with a fork, when a creamy consistency is reached, add the eggs and whisk them with sugar and honey.
Then delicately incorporate the cacao powder with the help of a sieve.
On a side grate the raw zucchini, already washed, and combine them with the chocolate mix.
At this point, slowly sift the flour inside (stone milled or ancient grains flour, as spelt or kamut, is preferable).
As last, pour the oil and stir all together. It’s possible also to add some chocolate chips, simply obtained from the bar with a knife.
Put in a cake-mould and bake in the oven at 180°C for 20 minutes.
Live to cool down before serving it. During summer is nice to be also refreshed for a while in the fridge.
*Avocado chocolate mousse and raspberries topping*
1 big ripe avocado
100 gr raw cacao powder
3 tablespoons of honey
1 small basket of fresh raspberries
Mash with a fork the avo in a bowl, sift the cacao and add the honey. Using an electric mixer, combine all together till obtain a foamy mousse, which is ready to be spread on the baked cake, once it is cold.
Decorate with fresh raspberries and finish grating on top the ½ chocolate bar.
100 gr cacao amaro in polvere
3 cucchiai grandi di miele
1 cestino piccolo di lamponi
In una terrina ridurre l’avocado in poltiglia con una forchetta, setacciarvi il cacao e aggiungere il miele. Utilizzando le fruste elettriche, montare il tutto fino ad ottenere una mousse spumosa, pronta per essere spalmata sul dolce, una volta fatto raffreddare.
Decorare con lamponi freschi e finire grattugiando sopra la mezza barretta di cioccolato.
